Easy Grilled Peach & Burrata Salad
This grilled peach and burrata salad is my favorite summer treat. Together, the peaches are so juicy, fresh, and have a perfect buttery caramelized grill flavor. Pair that with creamy burrata cheese and spicy arugula - it's absolutely heavenly!
- 8 oz Burrata cheese
- 3 Peaches
- 1 tbsp Butter
- 1 tbsp Cocunut sugar
- 1/2 cup Balsamic vinegar
- 4 cups Arugula
- 1/4 cup Pine nuts
- 1/4 cup Olive oil
- Black pepper to taste
- Heat the grill on medium heat. If using an outdoor grill, slice the peaches in half to prevent falling through the grates. If using an indoor grill pan, you can slice the peaches into quarters.
- Brush the peaches with butter and sprinkle with coconut sugar, then grill them on both sides.
- On a hot grill, give the peaches a light season of balsamic vinegar. Reduce the vinegar in a pot on medium heat for 5 minutes - it'll thicken as it cools down.
- Remove the stems from some fresh arugula, and add it to a plate along with 2 peach slices. Sprinkle some pine nuts for that extra crunch, then drizzle over some olive oil and the reduced balsamic vinegar. Finally, sprinkle with a little cracked black pepper for an added kick!
If you don't like arugula, you could substitute spinach, frisee or other salad greens.
