Perfect Classic Pot Roast

  • 1 boneless pork shoulder butt roast (2-1/2 to 3 pounds), halved
  • 1-1/2 cups beef broth
  • 1/2 cup sliced green onions
  • 1 tsp dried basil
  • 1 tsp dried marjoram
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 bay leaf
  • 6 medium red potatoes cut into 2-inch chunks
  • 4 medium carrots cut into 2-inch chunks
  • 1/2 lb pound medium fresh mushrooms quartered
  • 1/4 cup all-purpose flour
  • 1/2 cup cold water
  • Browning sauce optional


  • In a 5-quart slow cooker, place the roast and add in broth. Cook for 4 hours on high heat or until vegetables are tender and meat is cooked through. Then remove from the pot along with potatoes, carrots, mushrooms to keep warm before discarding bay leaf at last step of cooking process.
  • In a saucepan, mix water and flour until there are no lumps. Stir in the juice from your roast and bring to a boil while stirring constantly so that it doesn't burn or stick on the bottom of pan for two minutes. If you want, add browning sauce (a condiment used often when cooking meats) before serving with your roast meat dish as well as veggies.
